I'm actually making some for dinner right now. For light soup for one person you will need 1 stewing chicken cut into 1-2 inch cubes, 1 large onion or two small onions peeled, 1 large heirloom tomato or 3 small roma tomatoes, salt,1 teaspoon (chicken) boullion powder or 1 chicken boullion cube, 1 8oz can of tomato sauce or half of a 4 oz can of tomato paste( I prefer the paste), 1 habanero pepper (optional) 2 bayleaves
In a large pot add chicken, onion(s), tomatoe(s), boullion, and 1/2 teaspoon of salt. Set stove temperature to high. Add enough water to cover allthe chicken. onions and tomatoes should be floating on top. Because the meat is very hard it will take the longest to cook(about 45 min to 1 hour). When the tomatoes appear soft with the skin peeling off, puree them in the blender and add to the pot. The onions will be done when they are soft to the touch and the center rings start popping out of the top. Puree those and add to the soup. Add the tomato sauce or paste and stir everything together. If soup is too thick, add a little bit of tap water. Set the temperature to medium and add bayleaf and habanero pepper. [b]Note: [i]This is a very hot pepper so I just place it on top of my soup and allow the oils to slowly seep out of it without actually cracking open the pod. [/b][/i]
Allow the soup to cook until the chicken is at the desired tenderness. Taste for salt. If there is too little add more. Remove the bayleaves and serve with fufu or bread. Let me know how it goes. |

ingredients
broiler chicken
1 large onion
2 medium scotch bonnet peppers (optional)
2 cans of italian peeled tomatoes
a clove of garlic and/or ginger.
method for chicken light soup:
first of all place your chicken pieces into a pot and turn on the fire low.
cut your onion into small sized dices and place onto the chicken.
(optional)-cut 1 pepper into small pieces and place on top of the chicken.
next place around 7 tablespoons of water on the chicken and cover.let it steam for 20mins approx.
whilst the chicken is steming open your cans of tomatoes, place into a blender, (at this point add the small amounts of galic, ginger and the last pepper. optional) and blend till smooth.
when the chicken is stemmed add the tomatoes that have been blended.
next take a litre to litre and half of water,(maybe a bit more) and place it over the chicken and tomatoes.
season with salt to taste (bare in mind you will need quite a bit due to the chicken and wet ingredients.)
now leave to simmer with the lid on for around 35-45 mins at medium temperature (dont let it boil hard).
this can be eaten with garden eggs, okra and mushrooms too
the flavour of the whole soup will mainly come from the chicken so leave the skin on!.
i guess you know how to make stove fufu enjoy or maybe you are going make the pounded real one?

| Thanx guys...i needed this one today. Mme ko y3 mpusuo(super hot pepper soup with meat). First time having to cook for myself so i have to learn these things small by small. |

Light Soup- Pepper soup
Boil season meat, add gravy (pepper x 3, onions, plum tomatoes) add seasoning to taste. Take about 30mins and serve with bolied yams or potatoes.
