I have been eating lots of Red-Red with plantain, yam or rice. Any other suggestions?

awakye is good. depends if u will still want to add any meat to it, just get some stew, sarage (salad) on it n its more than enough.
Egushi stew is also good, goes with yam, rice plantain.

As a vegeterian myself I can say that beans has been the main source of protein accompanied with vegetables ans fruits.

You have to eat more Red Red, beans stew here and there and Soya bean drinks and product.

It's an interesting and very healthy lifestyle though.

Waakye. Rice. Beans. Wakye leaves. 100% vegetarian. Add gari & talia and you are straight. As for the stew and shito you are on your own. :P
